Creamy corn chowder

I had a major craving for some corn chowder yesterday, and after sadly discovering that I was missing like 5 ingredients for the VWAV version, I decided to scour the internets for another one. Behold! I found a recipe for Creamy Vegan Corn Chowder on Allrecipes, and I had ALL of the ingredients! Woohoo! This chowdah was super tasty, and was even better the next day! It didn't seem to be thickening up as much as it should, so I doubled the flour, and of course I used a lot more herbs and a lot of extra garlic :) This was a really satisfying winter-time dinner served with whole wheat garlic bread.

I got a box of chocolates! Maybe I do like Valentine's Day!

So, I've never been a Valentine's Day person. It's such a Hallmarky holiday, and Hello! Love me and cherish me everyday, thankyouverymuch! I guess with it being on a weekend this year, I decided to actually get Jesse a gift and we even went out to dinner! I got him a chinese dragon tea cup and some Ritter Sport bars, and he got me a fancy box of chocolates! Thank goodness Jesse bought me these, because they're so expensive I probably never would have tried one! Missionary Chocolates LLC makes vegan, organic, local ingredient truffles here in Portland and sells them in various places. A few months ago, someone on the PPK mentioned that they were sold at a wedding shop in Jantzen Beach (where Jesse works), so I couldn't resist but strongly drop the hint! I've only sampled the Sweet Raspberry Heart so far, and honestly - IT IS THE BEST TRUFFLE I HAVE EVER HAD, VEGAN OR NOT! Oh man, I am in chocolate heaven!

Dinner was awesome, but I forgot to bring the camera :( . I got a $50 gift certificate for $25 from a radio station deal last month, so we went all out at the Vita! The best thing hands down were the Buffalo Things - tofu buffalo wings. I've never had the real kind before so I had no idea what to expect, but Jesse misses them a lot and sorta freaked out over the deliciousness! He thought all of his meat eating friends would like the tofu ones just as much as the meat version!

Update on Cookie Dookie after her spay surgery:
I haven't mentioned the kitties in my last couple posts... Cookie has been acting funny ever since her surgery. Tomorrow will be the official 2 week mark when she's supposed to be back to normal, but I was really getting worried because she hasn't been as lovey with me as she used to be. She always loved to be held on her back like a baby, and hasn't been letting me hold her that way. She also wasn't waking me up in the morning by licking my face! All is back to normal, though, she just took a little while. I finally got a picture of her exposed hairless belly, and it's pretty cute! I get to cut her stitches out tomorrow, yay! Thanks for all your love and support, blogger buddies! :)

Close up... I wonder how long until that fur grows back?

Recent tasty eats

I had to stay too late at work, and now I'm too tired to attempt to be witty for a blog post. Blah! But, I do have some food porn that's been collecting since I haven't been posting much... Enjoy!

You know I love nachos! With black beans, cheesy sauce, Tofutti, guacamole, and mango salsa

I have to say a little about that one... it was really good! I think the flavors would have gone a little better with a butternut squash, though. I sauteed apples, garbanzo beans, celery, mushrooms, walnuts, tomatoes, and quinoa in tomato paste and wine and added a bunch of spices. I didn't even consult a recipe for this one (I'm a novice!), and it was totally edible! haha

Mexi-scramble!

What am I doing posting in the middle of the day? And how am I eating a cooked breakfast during the week? Well, Cookie is at the vet getting spayed today, so I took the day off. Between taking her in and picking her up and dropping off the Zipcars, I would only get in 4 hours of work at most, so I decided to just take a vacation day. I get to go pick her up in an hour. Yay! It doesn't feel right at home without the baby here!
